2 1/4 ts Active dry yeast (1 packet)
1 c chickpea flour
2 c White rice flour
3 1/2 ts Xanthan gum
2 ts sugar
1 1/2 ts Salt
1 1/3 c Nonfat dry milk powder
1/4 c Olive Oil
2 lg Eggs, well beaten
1 3/4 c Warm water
1/4 c Dried Onion
3 ts Onion powder
1/2 c pepitas (pumpkin seeds)
Makes a 1 1/2 pound loaf.
Warm the water & put the dried onion in it to soak.
Place all ingredients, (except the warm water/onion mixture
& the pepitas), in bread pan and press start. While the machine
is kneading, gradually pour in the water. If the dough
does not mix well, use a rubber spatula to assist it
When the bread machine chimes that it's ready for additional
ingredients, add the pepitas. When the baking cycle completes,
remove the bread & allow to cool. Store in the refrigerator,
in an air-tight container or plastic bag.
