Ingredient ratio: 1 tamale per egg
Use whatever kind of tamale you like or have available. I usually use Trader Joe's cheese & green chili.

Chop tamales into small pieces. If you're using TJ's and they're frozen, nuke 'em for 1 min 30 secs first.
Put a nonstick skillet on medium heat, add a bit of butter (the typical amount you'd use for scrambled eggs). Add the tamale pieces, stir around till they're butter-coated. Stir eggs into skillet. Cook until eggs solidify to your taste.
Serve with toasted flour tortillas and a side of refried beans, and hot, sweet black coffee. If you're feeling especially festive, add a dollop of Kahlua to the coffee, omit the sugar. Yum!
